“The Queen of Mills”, “the Mercedes” etc. they are the compliments we both receive and read about. Quite rightly so, if you consider that there is hardly any other mill on the market which has been so successful for such a long time.
“I have known this mill since I was a child and my children will grow old with it” …. That’s just how a mill should be – built to last for generations – a true value!
For more than 3 decades we have been learning how to construct mills and therefore know what is really important. True, quite a lot has changed since we started: New, modern synthetic materials have appeared on the market, the man-made corundum-ceramic mill-stone was developed. A lot has happened with regard to technology (new geometry for the milling mechanism, new adjustment mechanisms etc.)
We have always worked enthusiastically on technical innovations – however we do reject the idea of modernising the materials used (plastic instead of wood). Traditionally we prefer to retain old values and strive to construct this mill as naturally as possible. Designed in genuine, hard beech wood, its heart is a mill-stone made of naturally formed granite. Wherever technically justifiable we do not use plastic or metal materials in those parts of the mill which come into contact with the flour. Neither the outer metal ring - essential to the design of the mill- nor the flour ejector (inside completely lined with wood) comes into contact with the flour. In this regard we also pay special attention to the milling chamber which (except the stone carriers and the mill-stone) is built from hard beech wood.
Fact is that many housewives are often not especially experienced with to regard to technical details so we have exchanged the proven metal thread for the easier to use single-handed adjustment control. In accordance with our philosophy we do not use a plastic thread. Instead based on motor clutch technology we use a lifting and lowering mechanism of the lower mill-stone. It is fascinating to see just how easy the coarse/fine adjustment can be operated. Single-handed opening of the mill guarantees easy and fast cleaning.
Milling with granite: From the beginning of mankind naturally formed stones have been used to mill grain. The surface of naturally mined granite is smoother than the surface of corundum-ceramic mill-stones. This may be the reason - together with its natural origin – for the difference in quality of flour when compared with that milled with corundum-ceramic mill-stones. There is no scientific explanation. Nevertheless there seems to be a difference.
Older, more experienced bakers have tasted this „Natural-stone Flour“ and have given their true judgement in good Austrian dialect as follows "Des is halt no a Möh!" which means in good old English “That’s a real old flour”.
The convincing baking characteristics of flour produced by milling with natural mill-stones have been confirmed time and again by farmers, bakers, hobby cooks and recognised top chefs.
